Abstract

Метою навчальної дисципліни «Крафтові технології» є формування системи знань з крафтових технологій виробництва харчової продукції з сировини тваринного та рослинного походження, оволодіння професійними знаннями, навичками та вміннями щодо кулінарної обробки основної та додаткової сировини, обґрунтування параметрів та апаратурного оформлення технологічних процесів виробництва крафтової продукції в умовах ресторанного бізнесу. The purpose of the educational discipline "Craft technologies" is the formation of a system of knowledge on craft technologies for the production of food products from raw materials of animal and plant origin, mastery of professional knowledge, skills and abilities regarding basic and additional culinary processing raw materials, justification of parameters and hardware design of technological processes of production of craft products in the conditions of the restaurant business.
