Аналіз діяльності закладів ресторанного бізнесу в Україні під час війни

Abstract

У статті проаналізовано діяльність закладів ресторанного бізнесу в Україні під час війни. З’ясовано, що на кінець травня 2022 року в Україні закрилися 37% закладів громадського харчування, відповідно ресторанний сектор втратив до 60% працівників, а прибутки скоротилися вполовину або й більше. Визначено, що україн-ський ресторанний бізнес зробив вибір на користь невеликих та гнучких форматів: пекарень, кав’ярень, кафе та фастфуду, тоді як найгіршу динаміку показали бари. Досліджено, що лідерами відновлення діяльності є кав’ярні, невеликі пекарні і ресторани класу «люкс». Розглянуто досвід релокованих закладів ресторанного бізнесу під час війни в Україні з метою удосконалення рекомендацій ведення бізнесу у кризовий період. На основі аналізу діяльності закладів ресторанного бізнесу, яким вдалося відновити свою діяльність, сформовано про-блеми з якими зіткнулися підприємства. Визначено, що в майбутньому відновленню ресторанного бізнесу в Україні сприятиме активна інвестиційна політика, застосування інновацій та підтримка світової спільноти. The article analyzes the activity of restaurant business establishments in Ukraine during the war. It was found that by the end of May 2022 in Ukraine, 37% of public catering establishments had closed, accordingly, the restaurant sector lost up to 60% of employees, and profits were reduced by half or more. It is determined that most research-ers consider the impact of the war on the hospitality industry in the long term and do not focus on analyzing the development of the restaurant business today and solving problems of a practical nature. It was determined that the Ukrainian restaurant business made a choice in favor of small and flexible formats: bakeries, coffee shops, cafes and fast food, while bars showed the worst dynamics. It has been studied that the leaders of activity recovery are coffee shops, small bakeries and “luxury” class restaurants, as they need a small flow of guests to be self-sustain-ing, and the most difficult to recover are large-scale restaurant projects with author’s cuisine and a large number of seats. The experience of relocated restaurant business establishments during the war in Ukraine was consid-ered in order to improve recommendations for conducting business during the crisis period. Based on the analysis of the activities of the restaurant business establishments that managed to resume their activities, the problems faced by the enterprises were formed: staff shortage due to migration or mobilization; a decrease in revenue due to a reduction in the number of guests - on average by 50% of the pre-war level; price increase or unavailability of some products and, accordingly, reduction of dishes on the menu; the irrelevance of a number of formats - corpo-rate parties, birthdays, children’s holidays, etc.; significant reduction in demand for catering services; reduction of restaurant opening hours due to the curfew, which led to significant losses on the most profitable part of the res-taurant business - dinners. It was determined that in the future the restoration of the restaurant business in Ukraine will be facilitated by an active investment policy, the use of innovations and the support of the world community.
